最近蔥真的超便宜,一大把才 $40!又脆又綠~放了一週都快黃了,趕快切一切來大量消滅蔥蔥🔥

📜 蝸牛蔥餅

鹽、白胡椒粉、花椒粉、十全香油 @scmiso1954

中筋麵粉 300g、熱水150g、冷水 60g、鹽 1/2小匙、玄米油 1大匙

做法:

1.蔥切碎,加鹽、白胡椒粉與剩餘配料

2. 麵粉+鹽混合,倒入熱水用筷子拌成片狀,加入油拌勻後慢慢加冷水揉至光滑,蓋濕布醒 30 分鐘。

3. 分小塊桿成長條,刷香油鋪滿蔥花,捲起後封口,再捲成螺旋狀,小火煎至兩面金黃即可。(不用酥油改刷香油必較健康一點)

米紙快速版
兩張米紙淋水後稍微重疊,鋪上蔥花捲起,再捲成螺旋狀,小火煎到金黃即可。

When spring onions are cheap, it’s time for Spiral Spring onions Pancakes 🧅🔥

Got a huge bunch for only $40 — fresh, crunchy, and super green.
Mine was about to turn yellow, so I used them up ASAP 🤣
Too lazy to make dough? Same. I also made a quick rice paper version!

📜 Spiral Spring onions Pancake

Ingredients

  • Spring onion (chopped), Salt, white pepper, Sichuan pepper powder, Sesame oil (I used @scmiso1954)

Dough

  • 300g all-purpose flour, 150g hot water, 60g cold water, 1/2 tsp salt, 1 tbsp Rice Bran oil

Steps

  1. Mix chopped spring onions with salt, white pepper, and Sichuan pepper powder.
  2. Mix flour + salt, add hot water, then oil and cold water. Knead until smooth, rest 30 mins.
  3. Roll out, brush with sesame oil, add spring onions, roll up and coil into a spiral. Pan-fry on low until golden.

Quick Rice Paper Version
Wet two rice paper sheets, overlap slightly, add spring onions on one side, roll up and twist into a spiral. Pan-fry on low heat until crispy and golden.
