[食譜] 義大利肉腸甜菜根燕麥扁麵 Italian sausage cheesy fettuccine
Pride month 做了紅橙黃綠藍紫的彩虹義大利麵，就從紅色開始。所有義大利麵用的都是自己手工做的燕麥麵。當然也可以用一般義大利麵，但是可能會吃進很多我不是很想要放進我身體的東西... 紅色是用甜菜根做的。
I made red, orange, yellow, green, blue, and purple pasta for Pride Month. So let's start with red. For all the recipes, I used my handmade, unfortified oat pasta. You can of course use regular pasta if you want but you'd be ingesting some stuff that I wouldn't want in my body😂I made it red using beets.
This is originally a ravioli filling but I was too lazy to shape them and turned it into a sauce. It was surprisingly good.
1. 3 根小的義大利肉腸 small Italian sausages (150g)
2. 100+50g 現磨帕瑪森 freshly shredded parmesan cheese
3. 1 顆蛋 egg
4. 2 根辣椒(可省略) red chili peppers (optional)
5. 10 小番茄切半(可省略) cherry tomatoes halved (optional)
In a food processor, roughly chop the Italian sausage into ground pork.
Add 100g of parmesan cheese into the food processor and pulse 2-3 times.
Add in the egg and blend for a few seconds until well combined.
Move all ingredients from the food processor to a pan, add in the chopped chili peppers, and cook for 1-2 minutes until the sausage starts to brown.
Put in slightly undercooked pasta along with 1/2 cup of pasta water.
Add in the remaining 50g of parmesan and gently mix as you cook for another 1-2 minutes. Add in more pasta water along the way if it's too dry.
Add in the cherry tomatoes and lightly toss, cooking for another 30 seconds to a minute.
